Raw Chocolate Mousse

Hopefully this looks appetising enough in the photo for you to try.  This was the leftover raw chocolate icing that was on the girls’ birthday cakes recently.

You will find this recipe all over the raw world on the internet –  also known as rawcomole, chocomole, cacao mousse, and raw vegan chocolate dessert.  I never expected something so simple to taste this good!

Here’s my version:
8 medjool dates
2 ripe avocado’s (not too ripe)
2 heaped Tablespoons of cacao
1/4 teaspoon vanilla (powder or extract)
Raw honey to taste

Combine ingredients in the food processor until mixed well.  It helps to chop up the medjool dates first, if you’re after a smoother consistency.  But if you don’t mind the odd lump, then don’t worry about it.

I can’t remember how much honey I put in.  I’m thinking about a heaped tablespoon.  I prefer raw honey over any other sweetener but you could use something else, like pure organic maple syrup.
