I decided yesterday that I was going to start to dedicate more attention to ensuring that I’m getting the nutrition I need, as well as the kids. Anyone else stand at the kitchen bench and graze, while preparing lunch for kids? Guilty here. The problem is, my children’s leftovers and my cold cuppa tea is not adequate for keeping me healthy throughout the day. I’m starting to pay for my neglect. Naughty me.
So last night I found chia seeds in the pantry, in all their goodness, awaiting my use. I know of their wonderful benefits, but just had to get myself organised to actually use them. Here’s what I came up with for my breakfast today (prepared last night), which can I add, was not eaten while standing at the bench. 🙂
2 cups of mixed berries (I used a cup each of raspberries and blueberries this time)
2 small bananas
2 Tablespoons chia seeds
A large Tablespoon of raw manuka honey
1) I had to gently defrost the berries in a pot first as they were frozen.
2) Place all ingredients in blender and blend until smooth. Because I had used defrosted berries, there was about 1/4 cup of liquid. If you are using fresh berries, add a little water so the mixture blends easily.
3) Place in fridge overnight. In the morning, the chia seeds will have congealed and the result is a dessert-like consistency.
4) Optional: add a little vanilla or cinnamon the night before to the mixture, or some ground nuts to serve.
Best eaten in the morning, as this quantity of fruit after dinner will not do your digestion any good! Best eaten in the morning.
