Fruit and Nut Balls

These are another staple in our house, so easy to whip up for a snack or something for an after-dinner treat.  It doesn’t get much easier to eat healthy than this.

1 cup nuts (I use almonds)
1 cup dried fruit (I use raisins)
2 T of cacao powder (or carob powder)
A little raw honey

Add extras like bee pollen, goji berries, cacao nibs, and ground flax seeds.  If the mixture is too wet, add a little coconut.  If it’s too dry, add a little water.

Process nuts in food processor until fine, then add other ingredients until desired consistency is formed.  You should be able to roll them without leaving a sticky residue in your hands.

Once rolled in coconut, store in fridge or freezer.

{GAPS Notes: cacao or carob powder is usually not recommended on the GAPS Diet but some people find they can have it after being on the Diet for a while}.
